How come when I hit the share button I only get a chance to send email and not Facebook or Twitter? Is there a setting I need to activate?

What is available depends on what is available on your iPad, and currently authorized.

Example: I have both the Twitter and Facebook apps on my iPad. I've signed in to FB, but not to Twitter. The share button will show just FB. I switch to Twitter and authenticate. If I then try the share button again both Twitter and FB are available.

Also, I'm pretty sure if you have an iPad 1, or if you're running iOS 5, you can only share via email.

Like they said. On iOS 6, we use the built-in facilities, which take advantage of you having set up an account in Settings (Twitter, Facebook, Messages, or in China, Weibo).

iOS 5.x doesn’t have built-in sharing, so we at least let you email the screen shot.
