Is it possible in some way to create our own scenarios, using pre-existing maps, but by adding varied troops and troop types to the battlefield, rather than using the existing in-game editor, which only allows you to add a limited number of troops of a certain formation?

I seem to remember earlier versions of CC would allow as many troops, etc., to be added as you wanted.

You can mod the game to create totally new scenarios, but that is a complex process and not officially supported. There is some information on how to mod the game on the Matrix Games forum, and that are is frequented by some experienced modders, so you can ask questions there as well.
