1. How do you deploy an italian unit to north africa? I can't load it on a ship and there is no landing hexagon available?
2. To where can you deploy a general?
3. I have three units waiting to be deployed but i cannot do so because I cannot deploy the general and no hexagons appear to enable me to deploy later units?
Aaarghh
Any ideas please?

First - you should have probably posted this in general forum. That said:
1. Deploy it in Italy then load it on a ship during the next turn
2. Anywhere on map, except to units next to the enemy
3.If you have patched to 1.04 you can change the order of units in the deployment window by right clicking on them

Just to elaborate on Borsook's first two suggestions:
1) Any unit in a port city or in a land hex adjacent to a port symbol can be loaded onto a transport. Note there are no "empty" transports, however. A unit eligible to load onto a transport will have the button in the lower right of the unit window highlighted to green. It is the circle made of two arrows button next to the railroad move button. Clicking this will transform the unit into a transport. Move the transport to any vacant coastal hex, click that same button again, and then click on any of the highlighted hexes to move the now reconstituted unit onto that hex. I think the manual has more info about this if I am not clear.
2) Note that generals are not units themselves. You assign them to a unit by clicking on it per Borsook's instructions. Generals influence that unit and those within its command radius. If the manual is not clear on this, there are some posts on the mechanics of the command range in the general forum.
