Hi, it's still up for debate whether or not I will even take Normans, but I'm thinking about a combined arms list
Field Commandert
4x Milites
6x Milites Lacking Horse
6x Spearmen
6x Bow
Inspired Commander Duke William
Field commander
4x Milites
6x Milites Lacking Horse
6x Spearmen
6x Crossbow
Field Commandert
4x Milites
6x Milites Lacking Horse
6x Speamen
6x Bow
Theory is three separate all arms commands

While it may assuage your need for symmetry, I think you will find that the small BGs of missile troops, if left to themselves, will be hard pressed to score any significant shooting hits. Similarily, the Milites operating as individual BGs could prove to be difficult to protect.

My thought was to use them historically - archers keep up perpetual fire, offensive Spearmen go in to break up in infantry formations and knights exploit any success. Defensive Spearmen are used to protect archers when cav is away. If any withdrawal is necessary, archers keep up pressure while battle groups reorganize for another go. In defense, Spearmen make a defensive wall backed by archer's missile fire and knights to protect gaps and cover flanks

What happens when I run into an army with a shit ton of long pointy things? Wouldn't they just make a square and sit there?

Your army list is only 786 - 792 point, depending on whether your X-bow are unprotected or protected. If your archers are LF then you can drop the subgenerals to TCs saving an additional 30 points. This gives you 38-44 points to get to 800.
If you are trying for 900 thats another 100 points.

Ok, changed it to this......I don't really want a knight horde, want to keep it somewhat historical so I knocked this out.
William of Normandy - 80
1x Field Commander - 50
2x Troop Commanders - 70
4x Milites - 80
4x Milites - 80
6x Milites - 120
6x Milites - 120
6x Dismounted Milites - 72
6x Dismounted Milites - 72
8x Spearmen - 48
8x Spearmen - 48
6x Archers - 30
6x Archers - 30
900
Plan is to group all the infantry in one big command under the FC and the knights in smaller commands under the TC's. William can roam around and help where he needs to.

I'm not a huge fan of knight's in 6's, but I haven't played V2, so there may be very good reason to use this.
Just 'generally' I'd prefer to have 11 BG's than 10. Your break point is 5 as it stands, where as just by making 5 BG's out of 20 knights instead of 4 BG's out of 20 knights you increase your break point to 5.5 - which can be critical with an Inspirational Commander. He may bring back a fragmented unit and keep you in the game, whereas if you're broken @ 5, it's game over.

My initial thought was 5 battle groups of 4 knights, but then thought, what if I'm forced to tangle with some heavy armored knights......what you put changes my mind back to 5 groups of 4 though

Well, even still I'd think that going in against a Heavily Armoured Knights (assuming 4 packs) with 2 BG's of Armoured Knights (4 packs) in 3 up 1 back formation on each BG means that you can afford a casualty, whereas he can't. You distribute your casualties over two BG's so if one goes disrupted you're still in the fight with the other while Bill goes and checks what their problem is and tells them to put on their big girl panties and get back in the fray! Meanwhile you're able to match his overlaps.
It's never as simple as that because what's the rest of his army doing etc etc, and you're throwing in substantially more points, but in the end you WILL win that fight most of the time.
Even at impact, spreading the bad karma over two BG's, able to exceed his expansion... all together better (IMHO).
You ALSO have the flexibility of doing more with your knights. Oh, I only need one BG over on the left flank... kewl, I've only got 4's, so I won't waste time trying to work out if I need the 6's just in case. Oh look, he matched my knight with a heavily armoured knight BG... no problem, I'll just put another BG of my boys there.
One other thing that I find quite useful in these situations is where you want to charge with one but not the other (to piss off some skirmishers for example), well, you still have to test, but you can just let one go and try to hold the other, so if the one goes short then you can match. Too often one will go short and the other long and you're in a world of hurt.
Just my 2c worth, but what I'd be considering.
BTW - I'd put my knights down last.
