It's never been easier to create a simple battle.

Use the new Victory Points tool to add VP flags to your battles.

For some reason when I make these 'quick battles' the enemy never stays and defends.

They will always move out of their defensive positions, and counter attack me. Even if it means giving up well defensible positions to expose themselves.

Try the new tools.

If you place the enemy on the map, open the AI tool. All the units will be team 0 as default. On the tool, set aggression to 64. They should stay put.

Or try the new random tool.
