Britcon this year will be my first ever FoG event and this is the army I'm planning on taking:
CinC Troop Commander
2 x Troop Commander
1 Allied Viking Troop Commander
2 x 8 Nobles MF HW
1 x 8 Meic Mallachtain MF HW
3 x 8 Warroirs MF Light Spear
2 x 6 Light Foot Javelins
1 x 6 Light Foot Slings
1 x 6 Huscarls HF HW
2 x 6 Freemen HF Offensive Spear
Any composition advice would be appreciated.

I prefer Offensive spear in 8s, especially as you only have 3 BG of HF - makes them more resilient.

Keep your fingers crossed you don't meet any full fat Romans!

Which, at 25mm, you probably will.

Consider having the Huscarls as Spear, esp if you expect to meet knights.
Also you haven't graded your LF kerns. They may as well be poor, because you are just there to absorb shooting so the MF don't have to. Same reason an IC might be worth it.
Do you intend to use the MF Lt spr to do anything, or just rear support? because if the latter then 6 is better - a 6 can support two 8's. It's unlikely they will beat anything, even in rough - they can chase off LF but even fighting bow is dodgy

Must admit that having played Norse Irish albeit in 15mm last year I much prefer my normal infantry with HW rather than LS.

I think it would be better field as many as you can HF Superior to beat enemies and Poor skirmishers to cover from arrows your unprotected troops...

I resemble that remark. If only more armies had had the good grace to stand still and fall under Roman swords as the gods intended.
The Oxford 25mm tournament next month has been declared an anaemic low-fat zone, so Norse Irish and other hairy wall-to-wall barbarian armies should have a fighting fighting chance

Ah: freemen should be 8, they can't be in BGs of 6 bases...

Here's my list I used in a 15mm theme at 800 points.
CinC Inspired Commander
2 x Troop Commander
1 Allied Viking Troop Commander
2 x 8 Nobles HF HW
1 x 8 Meic Mallachtain MF HW
2 X 8 Warrior Heavy Weapon
1 x 8 Warroirs MF Light Spear
1X 6 Warriors MF Light Spear
2X 8 Light Foot Javelins avg
2 x 6 Light Foot Javelins avg
2X 8 Light Foot Javelins poor
1 x 4 Light Foot Slings
1 x 6 Huscarls HF HW
1 x 8 Freemen HF Offensive Spear
It looks like I was using more points than you. However I would take the nobles as Heavy foot. I found 2 BG's of vikings where enough for the one general. Heavy Weapon MF and the Mallachtain are typically enough mediums, and the Light Spear / Sword guys can support or be defensive. In 15mm I often still had to use the Malalctain in the open to extend my line. The gob of Light Foot was great fun. In several games they were able to kill armored Bow / Sword Avar and Magyar types by shooting..as I had enough to retire and swap units. I still lost as although it was a Dark Ages theme I ended up fighting 2 mounted bow armies (maybe you won't have to in 25mm) and then got speed bumped when some Normans rode over the top of the vikings. IC was well worth it, as my skirmish gob cold stand up to most shooting with it. I also found the 8's of poor light foot to be good value for the points, just remember to never get them in position where they can be caught. I broke as many units with light foot shooting as with anything else.
ps: The actual list I used droped a BG of average Jav and picked up some fortifications - also well worth the value for this list.
