LOS

We still have the position where as each unit moves, it reveals an area behind it. In reality, where a line is moving, everyone would go forward together so sight lines would not open up as they do in the game. Is it not possible for LoS to be calculated only twice, once at the beginning of a turn and once at the end?

I also think that Cavalry should be able to screen infantry, but not vice versa, unless the cavalry are on Shetland Ponies or else are the famed Welsh sheep-mounted cataphracts.

I think it would be better to say your LOS updates only when one of your units moves. This way it deals with your units pursuing over a hill, etc.

Of course I presume LoS would also update at end of a player turn so that any disclosed units are visible before the next player starts to move his units.

This actually wont work because the 2nd hidden line will be moving forwards on to tiles already visible to the other side so woudl still become visible. It needs a more complex solution unfortunately.

Yes, but that would be something the player could cope with by not moving into a hex which has just been vacated and would allow for the fact that it would in real life be possible to make out that something was going on 'behind the lines' I think that any attempt to reduce visibility on vacated hexes while not making any temporarily disclosed hexes visible would be very complex.

The 'snapshot' method is a compromise, but it should be much easier to put into effect and would be an improvement on the current position, which is plain wrong.
