1. Do chariots count as 'mounted' ?

2. Do they, like cavalry, have to break off if they don't win against infantry ?

3. Are they disordered by Camels /Elephants ?

Yes to all three

except for scythed chariots, still mounted etc but they die at the end of the turn if they have not broken their opponents. That sure saves on the forgetting to break off
