That would be a great battle to reinact.... I mean if the french didnt just charge ahead and get all bogged down on top of each other, the result may be totally different. Be nice to try anyway!

All the important battles/campaigns of the 100 Years Wars like Agincourt, Crecy, Poitiers, Formigny, Castillon... are obviously represented in the game and a lot more I assure you.

Do yuo get to lay seige to a castle or fortified garrison , "lest guilty in defence be thus destroyed

Some missions are designed to conquer a village or certain strongpoints on the map, but no real castle sieges.
