To go beyond the single books:
Best pre 1 AD army
Best 1 - 1000 AD Army
Best post 1000 AD European/near east army
Best post 1000 AD non-european/near east army
to get the ball rolling:
Later Seleucid
Arab Conquest
Santa claus/ Medieval CA
Ghaznavid
..............

Arab Conquest is too vulnerable to armoured foot. Believe me, I've tried. It is a win or lose army though.
Dominate Roman by far the best in this period. Dailami is somewhat similar, like a fast moving Roman, but
more vulnerable as MF. It also doesn't have the "I have 20 million BGs, hahaha, you can't win" effect* as
everything in the army is expensive.

Later Ottoman Turkish is better.
* Morally bankrupt being the shorthand term.

Well, aside from being all girly and running away, I had considered Late Ottoman as a near east army

I'd say that the best army of any period is the one that rolls sixes -consistently.

Lances, beer, both have the same effect. Sort the men from the boys.

My Swiss have neither which might explain their lack of success.

Take a minaret as the baggage, that should encourage them.
