I've looked around the forum and in the Reference Guide and didn't see one -- is there a unit list/matrix for which units are in which army-choice's build-list?

You can look at the ArmyList.txt files in your game folder.

But the easiest way is to look at the Force selection screen in Skirmish for each faction :
