I'm not sure these scenarios are working properly. At start I labouriously select my units. However when i start the battle my army consists of some units I did not specify and lacks some units I did specify. I am right about this?

In the first battle of the Angevin campaign, you have Scottish allies and your allies choose which units they will send.

Also all army lists have some compulsory units.

Also in reinforcement battles, siege relief scenarios, flank march scenario etc. the off-map or garrison units are pre-chosen by the system.

No sure what you mean by this, as you can't specify units before the battle starts, and as soon as you do specify them they are added to the map. Do you mean units from the previous battle? If so, some units get disbanded or amalgamated because of casualties in the previous battle.
