i m asking partly because i want to know how In real life it worked and partly because how game's logic work. So what are knights and Sergeants, can you give me some Political and economic or social background to them, and also what do they represent on the actual field physically?

They represent knights and all of their mounted followers who would normally form up in the rear ranks.

We only depict the knights because

a) they are prettier, and
b) the unit performs most historically in game if the equipment of the rear ranks is essentially ignored rather than averaged out. (Top Down design).
