The skirmish module covers Yorkist, Lancastrian, Richard III, Tudor and Yorkist Pretender armies from 1455 to 1500.

The campaign uses the same generic map as the vanilla Pike and Shot Campaign.
“This mod allows you to fight with armies that were not included in the original Pike and Shot game: The Irish, Anglo-Irish, Portuguese, Moroccans, Algerians, Dulkadir Emirate, Lithuanians, Moldavians, early Safavid Persians, White Sheep Turcomans, Uzbeks, the Khanate of Kazan, Crimean Tatars, Charles the Bold's Burgundians, the Monmouth Rebellion, Teutonic Knights, many Peasant armies, Georgians and the Mamluks. Together with some armies from the original game, that are included as they were traditional opponents of the added nations, such as the English, British, Spanish, Polish, Imperial, Hungarian, Swiss, Swabian League, Danish, Russians and Ottoman. Some of these have been changed or enhanced from the original game, with new units added and graphics updated.”

In v2: "Several major new armies added; Jacobite Irish, Jacobite Scots, Savoy, English Border Reivers, Scots Border Reivers, Venetians, Scots Covenanters, Bavaria, Prussia, Saxony, and Zaporozhian Cossacks."
Also an Army List notes document has been added to the Scenario Design Notes folder, which lists all the army lists in the mod and some brief information on how they differ from the standard game armies.

Fortunately not: the Mughals did use them but evidently not at Plassey. If they were there (and one does appear in that post-battle picture) it was as baggage and haulage animals, and possibly 'command posts' for senior nobles. But no record of them being used in a shock role. I'm guessing that gunpowder weapons, as used by the European and European-trained units, must have driven them to the verge of obsolescence. It does limit other eastern battles in that there is no elephant model, although they are mentioned in the unit list. I haven't the skill to construct one (although I'm guessing that you have - fancy a crack at it?).
