I remember we discussed that during the beta.
A lot of ideas appeared but none was implemented. Personally, I would like to see the aircrafts leaving the map.
Looking at the campaign in France of 1940, a lot of airfields were overrun by the Germans, resulting in destroyed airplanes (often by the crew themselves by the way) though sometimes they managed to escape to a new airfield.

So if we overrun an airfield in game, maybe the airplane unit rebases (or get removed from the map if there is no airfield to rebase to) but the unit takes 50 % damage or something like that?

It didn't change in BETA because the current system has enough supporters that it was left as is. It was built with purpose, and content was then designed around that purpose.

So no, don't ever expect this to change. Aircraft are going to explode when they lose access to all friendly airfields. It's the same effect as original Panzer General, it just happens faster and more dramatically than all those aircraft slowly running out of fuel before they finally die.

What might change is options for scenarios to have different outcomes, based on user designs and intentions. So the door is always open, just not for the default outcome. :)
