I think then that if the enemy facing the camels were two groups of cav (or knights even) single ranked deep with the end stand on each group facing one stand of the camels, none of the enemy would be losing dice due to disorder either. Is that the correct conclusion?

Single ranked cavalry only in contact with one base of camels would not lose any dice for dissorder in melee as they only have 2 dice so there is no loss from the 1 per 3 dissorder loss. Knight in mele on the other hand would have 4 dice so losing 1 per 3 they would lose a dice.
