I fell in love with the games Sengoku Jidai, Pike&Shotte and the Field of Glory series (I even have the table top rules). The thing is, I am looking for a game like those based in the black powder era, Napoleonics, American Civil War, AmerIcan war of Independence, etc. Is there a game out there I'm looking over or missing that can scratch that itch? I Know there is Total War: Empire and Total War: Napoleon but those just won't do. I want that table top feel like Pike&Shotte, Sengoku Jidai, and Field of Glory(s) give me. Can someone lead me to the promised land? Or point me in the right direction?

Unfortunately I won't "lead you to the promised land" as I am not an expert of this period.
There are quite a few mods and scenarii for Field of Glory 2 and Pike & Shot, two games you mentioned, that cover the 18/19th centuries and might interest you if you don't know them yet, such as :

These cover MANY of your black powder desires, they are heavily historically researched, have a miniatures graphics option for that table top feel, and use a unified rules system across the various eras. The series is deeper than P&S, Sengoku and FoG II but has a familiar play style. Though they are older games (some more than others), they've had some graphical and engine updates recently (the Civil War, 1812, Mexican American series looking the best) that have made them much more visually appealing. The games are easily moddable (especially the sounds, thank god) and there are many mods for the various titles.
If you read this in time there will be a sale starting December 15, 2021 to January 3rd.
