I have tried to set the game resolution in the proper dialog box in the game Options, but, my selection doesn't seem to "take".
In other words, the game seems to stick with its own selection of resolution, despite my selection.
I'm flummoxed.

The changed resolution only takes effect when you restart the program. You have to shut it down properly using quit otherwise the changed resolution is not saved.

Yes, that is true.
And yet, even after shutdown, the game seems to select its own resolution setting aside from my selection.
The game's selection looks OK, but, the odd thing is I don't seem to be able to make my own resolution selection and make it stick.
You see, I have a wide screen monitor with a recommended setting of 2560x1080. So, what resolution setting should I try to select for the game?
And yet, even after shutdown, the game seems to select its own resolution setting aside from my selection.
The game's selection looks OK, but, the odd thing is I don't seem to be able to make my own resolution selection and make it stick.

Try opening up your OPTIONS.TXT file (in My Documents/My Games/PIKEANDSHOT) and setting the rezx and rezy values to your desired resolution. It could be a permissions issue on the file (if, e.g., the game somehow ran as Admin in the past, non-admin runs would not be able to save the file).
A simple alternative would be to delete the options file and then try changing from ingame again.

I'd recommend trying 1920x1080.
